The menu will be customized for your event, but keep in mind, the real star is having cold-smoked Wagyu cooked at nearly 1,000 degrees.
While you visit with your honored guests, enjoy a glass of a 10 year Tawny Port, and a presentation of:
Homemade Charcuterie:
- Lightly cured Salmon with dill
- Duck Breast Prosciutto
- Cold Smoked Capicola
- Basil, tomato, and mozzarella with a balsamic glaze
- Variety of cheeses
Fresh cooked bread and dipping oil:
- Fresh bread baked in the wood-fired oven
- Fresh herbed olive oil for dipping
Light and refreshing to cleanse your palette and refresh your taste buds:
- Shrimp Ceviche with a refreshing citrus sauce(vegetarian option available)
You'll want to gather around the oven and experience the Wagyu cooked at a very high heat. Steak will be served medium and will be presented table side to be enjoyed in conversation. You will enjoy the comparison of preparations; First presentation with just the Wagyu and salt, then the wagyu that has been cold smoked.
- Roasted potatoes and creamy orzo pasta will accompany the richness of the Wagyu
To round out the progression, enjoy the light taste of the white wine poached pears with a lemon/port drizzle.
